The history

Bluefin × Tartufo.

The bluefin tuna has been the most considered fish in the Mediterranean for three thousand years. The Phoenicians named it *thunnus*. The Romans built *cetariae* — the salt-cure villas of Andalusia and Sicily — to preserve the spring migration through the Strait of Gibraltar. The almadraba trap-net, deployed off Cádiz for at least two millennia, is the original sustainable fishery: a system that takes a small fraction of what trawlers take, by an engineering tradition that has not changed in two thousand years.

Our Bluefin × Tartufo is sourced from a single licensed almadraba operation in the ICCAT-quota waters of the central Mediterranean basin. Every fish is tagged at the trap; the tag number travels with the catch to our atelier, and from the atelier to the jar's certificate of provenance. The fish is packed *solid* — whole-piece, the industry's highest pack grade, distinct from flaked, chunk, or grated — in select Andalusian extra-virgin olive oil. Eighty milligrams of fresh Alba white truffle (*Tuber magnatum pico*) is shaved into each jar at packing.

The pairing of bluefin and white truffle is not a marketing decision. It is the modern continuation of the Italian gastronomic tradition that Pellegrino Artusi — writing in 1891 — identified as the highest possible register of the cured-fish kitchen. The Bluefin × Tartufo jar is the founder's argument that what was once available only to the household of an Italian count can now be set on a table in Brooklyn or in Tokyo, with the provenance signed, in glass, on a chain that does not forget.

Health

What it gives the table.

  • Sashimi-grade Mediterranean bluefin — among the most prized fish in the global gastronomic canon, graded by fat marbling, colour, and snap.
  • Omega-3 EPA + DHA: approximately 1.5 g per 100 g — EPA and DHA contribute to normal heart function (EU-authorised claim).
  • Lean protein density: 24 g per 100 g — sustained satiety without saturated-fat penalty.
  • Selenium: a single serving provides over half the U.S. daily intake — thyroid function and antioxidant defence.
  • Vitamin B12: approximately 90% of daily intake per serving — nervous system and red blood cell synthesis.
  • Vitamin D: 8–12% RDA per serving — bone density and immune modulation.
  • ICCAT-quota controlled fishery: every fish identified by tag at the trap; mercury tested per lot to EPA-grade tracking standards.
  • Glass-jarred — never tin-tinged, no BPA exposure from container coatings.

What you are paying for

At $58, what the price represents.

At fifty-eight dollars, you are paying for the solid-pack Mediterranean bluefin tuna we buy at a single licensed almadraba trap-net fishery in the central Mediterranean basin — approximately twenty dollars of fish, against the three to five dollars of fish a $14 commodity tin contains. You are paying for the 0.08 grams of fresh Alba white truffle (Tuber magnatum pico) shaved into each jar at packing — approximately one dollar thirty of truffle, against zero in the commodity tin. You are paying for the French extra-flint glass jar — approximately two dollars forty, against thirty cents of coated aluminium. You are paying for the multi-SKU co-pack tolling at the Italian processor; for the cold-chain logistics from the Mediterranean to New York; for the Sigilium provenance infrastructure that commits your jar's serial, by hash, to a public ledger that does not forget; for the Orthodox Union certification audit cycle; for the founder's hand on the chain; for the atelier overhead in New York; for the brand-building investment that will compound across the catalogue's twenty-five-year horizon. The luxury is everything the price represents — every line of it visible.
