The bluefin tuna has been the most considered fish in the Mediterranean for three thousand years. The Phoenicians named it *thunnus*. The Romans built *cetariae* — the salt-cure villas of Andalusia and Sicily — to preserve the spring migration through the Strait of Gibraltar. The almadraba trap-net, deployed off Cádiz for at least two millennia, is the original sustainable fishery: a system that takes a small fraction of what trawlers take, by an engineering tradition that has not changed in two thousand years.
Our Bluefin × Tartufo is sourced from a single licensed almadraba operation in the ICCAT-quota waters of the central Mediterranean basin. Every fish is tagged at the trap; the tag number travels with the catch to our atelier, and from the atelier to the jar's certificate of provenance. The fish is packed *solid* — whole-piece, the industry's highest pack grade, distinct from flaked, chunk, or grated — in select Andalusian extra-virgin olive oil. Eighty milligrams of fresh Alba white truffle (*Tuber magnatum pico*) is shaved into each jar at packing.
The pairing of bluefin and white truffle is not a marketing decision. It is the modern continuation of the Italian gastronomic tradition that Pellegrino Artusi — writing in 1891 — identified as the highest possible register of the cured-fish kitchen. The Bluefin × Tartufo jar is the founder's argument that what was once available only to the household of an Italian count can now be set on a table in Brooklyn or in Tokyo, with the provenance signed, in glass, on a chain that does not forget.
