Ivory King × Saffron.

Ivory king salmon is the rarest of the wild salmon. Genetically identical to the standard king (*Oncorhynchus tshawytscha*) except for a single inherited trait — the inability to metabolise carotenoid pigment from prey — the ivory phenotype constitutes between one and five percent of any wild king catch. The flesh is white where the standard king's is red, the fat content is higher, the texture is softer, and the eating tradition treats it the way Japanese sushi houses treat *shiro maguro* — as the considered apex of the species.

We have written a supply commitment with our single Bristol Bay cooperative for the cooperative's full ivory-phenotype allocation across the season. The fish is packed solid in select Andalusian extra-virgin olive oil and finished with Persian Negin saffron sourced from a single Khorasan cooperative — the gold-grade saffron of the Persian gastronomic tradition, paired with salmon in the Achaemenid royal kitchens twenty-five hundred years ago and continuously since.

The pairing of ivory king and saffron is a thousand-year argument that two of the most considered ingredients in the world belong together. The Releone case is that this jar can be on a table that has never had access to either — and that the chain will remember the year, the boat, the harvest, and the founder's hand for as long as the chain exists.
