Preserved Amalfi Lemon.

The *Sfusato Amalfitano* — the IGP-certified lemon of the Amalfi coast — is, in the Italian gastronomic tradition, the only lemon that earns its name in a kitchen. The fruit is elongated, the rind is thick and aromatic, the oil-cell density of the zest is unmatched. The IGP designation, issued by the Italian state in 2001, recognises the specific terroir of Atrani, Maiori, Minori, and Positano — a steep terraced coast where the lemons grow under the wooden *pergolato* trellises that the Amalfi tradition has maintained since the Roman period. Releone's Preserved Amalfi Lemon is the whole fruit: lemons brine-cured for sixty days in the house's mineral curing brine, then packed under select Andalusian extra-virgin olive oil in a clear flint glass jar. The brine-cured lemon is one of the oldest citrus preparations of the Mediterranean larder — and the founder's argument that the most considered lemon in the world deserves to be preserved whole, in glass.
