The vintage sardine — *sardine millésimée* — is a French tradition that the houses of Connétable, La Belle-Iloise, and La Quiberonnaise have practised for over a century. The premise is counter-intuitive: a high-quality sardine, preserved in olive oil under proper hermetic seal, *improves* with age. The olive oil softens the protein structure, the flavour deepens and rounds, and a vintage sardine at five to ten years of age is considered, in the French gastronomic tradition, a superior eating experience to the same sardine eaten fresh from the jar.
Releone's Sardine Millésimée applies this tradition to a single-fleet Algarve coastal catch. The fish is sardine — *Sardina pilchardus* — caught in the Atlantic off the southern Portuguese coast, hand-cleaned, packed skin-on, boneless, in select Andalusian extra-virgin olive oil with the harvest year stamped on the lid in gold foil. The founding vintage is stamped 2027.
The case for the Sardine Millésimée is that it is the only SKU in the catalogue that is *engineered to improve over time* — a literal investment in a future eating experience, with the Sigilium serial committing the harvest year to the chain as the canonical record of provenance. A jar opened in 2037 will still verify to its 2027 origin. The chain will remember the founding.
