The history

Sardine Millésimée.

The vintage sardine — *sardine millésimée* — is a French tradition that the houses of Connétable, La Belle-Iloise, and La Quiberonnaise have practised for over a century. The premise is counter-intuitive: a high-quality sardine, preserved in olive oil under proper hermetic seal, *improves* with age. The olive oil softens the protein structure, the flavour deepens and rounds, and a vintage sardine at five to ten years of age is considered, in the French gastronomic tradition, a superior eating experience to the same sardine eaten fresh from the jar.

Releone's Sardine Millésimée applies this tradition to a single-fleet Algarve coastal catch. The fish is sardine — *Sardina pilchardus* — caught in the Atlantic off the southern Portuguese coast, hand-cleaned, packed skin-on, boneless, in select Andalusian extra-virgin olive oil with the harvest year stamped on the lid in gold foil. The founding vintage is stamped 2027.

The case for the Sardine Millésimée is that it is the only SKU in the catalogue that is *engineered to improve over time* — a literal investment in a future eating experience, with the Sigilium serial committing the harvest year to the chain as the canonical record of provenance. A jar opened in 2037 will still verify to its 2027 origin. The chain will remember the founding.

Health

What it gives the table.

  • Algarve sardine: a small, low-trophic-level fish — minimal heavy-metal accumulation, sustainable harvest.
  • Omega-3 EPA + DHA: approximately 1.5 g per 100 g serving.
  • Calcium: bones eaten whole — a single serving provides over 25% of daily intake.
  • Vitamin D: 11% RDA per serving.
  • Vitamin B12: 88% of daily intake per serving.
  • Selenium: 32% U.S. daily intake per serving.
  • CoQ10: sardines are one of the most concentrated dietary sources — supports cellular energy.
  • Improves with age: vintage-dated and cellarable up to ten years; the protein softens, the flavour deepens.

What you are paying for

At $24, what the price represents.

At twenty-four dollars, you are paying for the only SKU in the Releone catalogue that is engineered to *improve over time*. The vintage sardine — *millésimée* — is the French tradition the houses of Connétable, La Belle-Iloise, and La Quiberonnaise have practised for over a century: a high-quality sardine, preserved in olive oil under proper hermetic seal, that develops a softer protein structure, a deeper flavour register, and a higher secondary-market value with each year of cellaring. A vintage Releone sardine, cellared properly, is expected to appreciate the way a serious Bordeaux does. You are paying for the founding vintage (2027); for the single-fleet Algarve coastal catch; for the harvest-year stamped on the lid in gold foil; for the Sigilium commitment of the year to the chain, which will verify your jar's vintage for as long as the chain exists. You are paying, in short, for an asset that is also an eating experience — and an eating experience that improves on the calendar.
