Salmon roe — *ikura* in the Japanese sushi vocabulary, from the Russian *икра* (eggs) — is the original luxury seafood. The Japanese gastronomic tradition has graded ikura on three criteria for at least four centuries: the size of the individual eggs (the larger, the more prized), the translucency of the membrane (the clearer, the better the curing), and the snap of the egg against the palate (the firmer, the more skilful the cure).

Wild king salmon ikura is the rarest grade in the global ikura market. It is harvested only during a narrow tidal window when the wild king salmon return to spawn, when the eggs have ripened in the body but have not yet been released. The harvest is single-tide — a window of twelve to twenty hours per cooperative quota per season — and the cure is light, with sea salt and Japanese soy, executed within four hours of harvest at the cooperative's beach-side facility.

Releone's Wild King Ikura is a wild king ikura prepared to sushi-house grade.
